One Mexican Restaurant I’ve never been to is Los Cabos Cantina & Grill in Pioneer Parkway. I went to their location on Main Street in downtown back in May of 2018, but sadly that location is now closed. I can’t believe that was over two years ago!
So now, let’s go get our weekly taco fix from the Northside location of Los Cabos Cantina & Grill!
And Through the magic of the inter webs…
Here we are on this chilly-ass winter evening!
Brrrr, it’s cold out here!
They’ve constructed an outdoor patio dining area here to comply with the current Covid mitigations.
Well, we’re getting our tacos to go, so we’ll venture inside to pick them up..
Here’s one of the owners of Las Cabos with this week’s taco dinner, Chaba!
Great to meet him and he said I could take a few photos of the inside of the restaurant, so that’s what we’re going to do!
I love the bar here and when things open up, we’ll have to come here and have a Saturday Night Dinner here!
There’s dining tables opposite the bar and behind the wall is the dining room.
This sign kind of cracked me up in these pandemic times.
“Please wait to be seated…for probably at least three to six months!”
Sad, but it’s just the way it is!
Okay here we are back at MBIP World Headquarters and Kitchen Tasting Area with this week’s taco dinner.
Let’s dig in!
We’ll start off by sampling an order of their Queso Fundido cheese dip with chorizo sausage.
This was rich, spicy and so delicious.
And since I was eating it all alone, I was free to double-dip with no guilt whatsoever! This is pure freedom ladies and gentlemen! Woo and fucking hoo!
And in between the dip and the main course, we’ll have a little palette cleanser in the form of a giganzo can of Bud Light.

This week’s taco selection is Los Cabos’ Tacos de Camaron.
These are Mexican Street Tacos with grilled shrimp inside of the warm soft tortillas.
They come with a spicy home-made tomatilla sauce and crispy cabbage.
Wow, these are so delicious!
The grilled shrimp are tasty and succulent and that home-made tomatilla sauce has quite the kick to it and really adds a nice spicy level to these tacos!
I also got a hard shell taco filled with spicy ground beef. This is an American-styled taco topped with shredded lettuce.
I added some of the spicy tomatilla sauce and as an after-thought I ladled on some of the cheesy Queso Fundido dip.
This taco was crunchy and a tasty treat!
I’m looking forward to coming back here when this rotten pandemic is all over and we can have a margarita at the bar!
