The Fox Pub And Cafe is the only place in Peoria to get an English-styled “Bap” sandwich. A Bap is fresh-baked sandwich bun they make in England. And now, thanks to the Fox Pub, it’s in Peoria too.
In July of 2016, I went and sampled the Gourmet Fish Bap with my friend, John Ingles. He also got a sandwich, so this week, we’re featuring not one, but two sandwiches of Peoria!

Set the Wayback Machine to July 26, 2016 and it’s back to the past we go!
My friend John Ingles joined me for this afternoon sandwich lunch.
He and his wife, De are the heart and soul behind, Smiley Graphix. They imagine, design and create.
How do I know this? It says so on this sticker, so it must be true!
We arrived at The Fox Pub and there’s John opening the door to what will lead to this week’s Sandwich of Peoria.
We settled in at a table and Brooke came over and gave us a two finger salute and helped us pick out our sandwiches. I love her!
I strolled over to the bar and ran into Matt Rixner, who owns the Fox Pub with his wife, Cortney. Always a pleasure to chat with him and check out all the beers on tap!
Meanwhile, back at our table, Brooke is serving up our sandwiches!
John got the Memphis style Brisket sandwich, which is their slow-cooked brisket topped with homemade cole slaw and served with fries and BBQ sauce.
It looks delicious and John confirmed that it was indeed a tasty and satisfying sandwich.
I got the Gourmet Fish Bap with a side order of Fox Fries. It looks fabulous!
The fish is beer-battered Haddock and the sandwich is topped with melted cheddar cheese. The sandwich is also dressed with cole slaw, onions and pickles. The English Bap bread is bakery fresh and this is a delightful combination of flavors that compliment each other perfectly.
There’s only one place in Peoria to get a Gourmet Fish Bap sandwich and that’s at the Fox Pub and Cafe.
