We continue our weekly tribute to Peoria’s Irish bars who took a hit this St. Patrick’s Day by cancelling their celebrations to promote social distancing. This week I’m paying tribute to one of the newest Irish bars in Peoria Heights that has a connection to one of Peoria’s oldest and classic bars.
Billy Blasek owns and runs W.E. Sullivan’s Irish Pub and Fare along with his wife Lauren. Billy is the nephew of Mike “Sully” Sullivan who was the owner of Sully’s, a legendary downtown Irish bar that is sadly closed now.
His other uncle is Pat Sullivan, the owner and operator of Kelleher’s Irish Pub, so Billy put in time working for his two uncles, learned the business and in 2016 he and Lauren opened up W.E. Sullivan’s and it’s been a successful Irish pub complete with wonderful food and drink and live music and fun events.
Below are some links to posts I’ve done on trips to W.E. Sullivan’s!
Here’s a post from my very first visit to W.E. Sullivan’s back in December of 2016. I can’t believe it was almost four years ago! Fun flies when you’re having time!
That’s Lauren and Billy standing behind a Sullivan’s sign that used to hang at Sullvan’s bar on Main Street, owned by Sully.

Just about a year later I went and sampled their Spicy Chicken and Waffles Sandwich. It was so delicious!

At the end of the year long sandwich tour, I had people vote for their favorite sandwich and then took a group of four esteemed judges to pick their favorite. W.E. Sullivan’s took second place, but it was really a close race!

W.E. Sullivan’s has a fantastic back room where you can host a party and we had a super-fun birthday party back then for my friend Amber back in 2017.

For about a year I did a weekly “People of Peoria” segment and on April 26, 2018, I profiled Billy Blasek!

I loved that chicken waffle sandwich so much, I had to include it on my 13 months of chicken tour. My friends Amber and Joe joined me on the night from June 18, 2019.
