This is the second Filet Mignon I’m cooking from our Keens Steakhouse Goldbelly Box.
I cooked the first filet in a traditional style, but I thought for the second one we’d try something a little more unusual.
I’ve decided to make a Filet Mignon Burrito!
There’s this week’s filet mignon all wrapped up in the Keens butcher paper.
Here’s the ingredients for this week’s Little Golden Lunch, clockwise from the bottom left: Tillamook Mexican Blended Cheese, chopped onions, Taco seasoning, Chicken Herb Minute Rice and Old El Paso Burrito Flour Tortillas.
I salted the filet and let it come to room temperature as I warmed this pan up and added Extra Virgin Olive Oil to it.
Then I browned the filet on all sides and put it in the 400 degree oven with a pat of butter on top.
It’ll cook in here for five minutes.
While the filet was cooking I got the Chicken and Herb Minute Rice out and put it in the microwave oven.
Before you know it the filet is done and we’ll put it over here to rest for a few minutes.
We’re really moving along here!
Now we’ll put some of the chopped onions in the pan and add lots of sauces and seasonings to them.
The honey is an important ingredient and will be a nice sweet element to counter with all of the spicy and savory seasonings going into the mix.
Now we slice up the filet and add it to the onion sauce in the pan.
We’ll cover it and let it cook and mix with all of the flavors in the pan. It smells fabulous!
Time to build the Fliet Mignon Burrito!
I placed the filet and the onion sauce on the flour tortilla and piled some of the Tillamook Mexican Blended Cheese on top.
Here’s this week’s Little Golden Lunch and it looks amazing!
Let’s dig in!
I added some of the Tillamook cheese to the rice and it was a tasty and satisfying mix of rice and cheese!
The filet burrito was absolutely delicious.
The filet was tender and juicy and mixed well with the Mexican cheese and the onion sauce it was cooked in.
This was a unique and flavorful spin using filet mignon as an unusual ingredient in a burrito!
