I’m starting a new Friday series here at MBIP because I think the Friday Fast/Frozen Food thing has hit it’s expiration date and now it’s time to start something new here.
I’ve thought since it’s Friday and the start of the weekend, it might be fun to go to a bar on Thursday night and ask the bartender to either make a special drink of the week for us or mix us up an existing one on the menu.
I’m honored to have a drink named after me on the Tannins & Hops Signature drink menu: The Wombacher Sour. There it is below on the menu in all its glory!
I think it makes perfect sense that the Wombacher Sour should be the first drink for this brand new MBIP series!
Here we are at Tannins & Hops, Peoria’s only Speakeasy styled bar. If per chance you don’t know about this place there’s no sign out front, you just have to know where to go (hint, it’s on Water Street near the corner of State Street). If the curtains are shut, then Tannins & Hops is open for business and drinks are being poured behind them.
However, like most Speakeasy’s, you need to know the secret password to get in the door and past Bernardo the bouncer and doorman. I’ve come along with some special guests and luckily we all know that the password is: “I hear this plays in Peoria.” But don’t tell anyone, it’s a secret!
I love the bar area in here, it’s dark and comfortable and my favorite thing is that there’s absolutely no TV sets! The two screens above the bar feature which the craft beer selections and what wine is available by the glass. There’s communal tables behind and to the side of the bar and the emphasis in here is good-old fashioned socializing and having conversation. One thing I’ve noticed in here is that you don’t see too many people fiddling or staring at their phones and I love that! The food in here is fantastic and ever-changing. However, we're here for a drink and so let's belly up to the bar!
This gentleman will be preparing our drink tonight. This is Thomas who’s one of the expert Mixologists behind the bar and he’s also the General Manager of Tannins & Hops. He told us that since The Wombacher Sour has been on the signature drink menu it’s been the most popular of all the cocktails!
Here’s Thomas constructing the cocktail and showing some of the ingredients used in the drink.
Thomas pours the drinks and as you can see, even the ice in here is made on premises. The final step of preparing the drink is that it’s topped off with red wine.

Here I am with the special guests for the debut of this series, my friends Amber and Joe! We all sampled the drink and that’s me trying to snort it, but it looks like I’m blowing a booger into it! This drink is so good, even if it wasn’t named after me I’d love it!
